THE MIXED FARM · GRANITE COUNTRYThe grove
The first olive tree at McIvor Estate was planted in 1999. Since then, the grove has flourished in the same free-draining granitic soils that shape the vineyard.
Italian Frantoio and Correggiolo grow alongside Spanish-bred Manzanilla and Nevadillo Blanco. A small number of Kalamata trees are kept for table olives.
The estate produces extra virgin olive oil in small quantities, continuing the idea of a traditional mixed farm where vines, olives and country life share the same ground.
Free-draining granitic soils give the grove the same compelling setting as the vineyard rows around it.
Oil varieties are mechanically harvested and held separately so each parcel can be processed on its own terms.
After cold pressing and settling, the oil is stored away from light and air to protect its freshness through the year.

The grove's extra virgin olive oil is produced with the same attention given to the wines: harvest at the right moment, process carefully and protect what the fruit already holds.
